How to make Empanada


Empanada is a popular food snack in the Philippines.It is similar to siopao (both have fillings) but empanada is made and taste differently. Empanada is fried, while siopao is steamed. An empanada is a stuffed bread or pastry. The name comes from the Spanish verb empanar, meaning to wrap or coat in bread. Empanada is made by folding a dough or bread patty around the stuffing. In Spain, empanadas are usually large and circular in size and are cut into smaller portions for consumption, whereas in South America empanadas are normally small and semi-circular.

There are many empanada recipes around, what we have here is a basic procedure how to make empanada ( you can change or improve on the fillings) , and video showing how it is done, the Pinoy way.

You need:




1 tablespoon vegetable oil
2 cloves garlic crushed
1 large onion diced
1 cup carrots diced
1 cup potatoes diced
1 teaspoon sugar
1 tomato chopped
1/2 lb ground beef
1/2 lb ground pork
1/2 lb ground chicken
3 tablespoons raisins
1 tsp salt
1/2 tsp black pepper
5-6 eggs hard boiled and quartered
20-24 slices sweet pickles

Dough:

2 egg yolks slightly beaten
3/4 cup of water
1/3 cup sugar
1 tsp salt
4 cups sifted AP flour
1/4 cup melted butter or margarine
2 c. veg oil for frying

Procedure:

1. Saute garlic and onions, add carrots potatoes and sugar and saute 3 min. add ground beef, pork chicken raisins salt and pepper and mix well, cook 15-20 min stirring occasionally.
2. Allow to cool.
3. Make dough...mix egg yolks, water, sugar and salt in bowl (the wet)...add to flour. Mix to a stiff dough. Knead until a fine texture is obtained.
4. Roll out dough on dusted board until it's very thin. Lift one end of the dough and brush the outer surface with melted butter. From this end roll the dough like a jelly roll, brushing the surface with more butter until the whole roll is about 1/2 in thick.
5. Cut into 1 inch thick slices.
6.. Flatten each into thin rounds about 3-4in in diameter. Cover with plastic wrap or moist towel.

To assemble:

Place a heaping tablespoon of the meat filling onto each circle, add a piece of hard boiled egg, and a slice of sweet pickle. Brush the inside edges of the dough with cold water, fold pastry over to make the empanada, and add an edge with the tines of a fork. Deep fry in 350 oil, or if baking, brush with an egg wash and put into a 400F oven for 15-20 min.
