Making Pork Ham, Bacon and Chicken Ham


HOW TO MAKE PORK HAM


Ingredients and their Weight

Ham 1.0 kg.


Pickling Solution:
Salt 19.8 g
Sugar 4.6 g
Prague powder 4.2 g
Phosphates 3.0 g
Water 100 ml

Dry Mixtures:

Salt 28.0 g
Sugar 6.0 g
Prague powder 6.0 g



Procedures:

1. Trim ham and clean with cool water.
2. Drip for 20 – 30 minutes.
3. Dissolve all ingredients for the pickle solution.
4. Inject at all different points of the ham.
5. Mix all ingredients for dry mixtures.
6. Rub the dry mixtures over the ham.
7. Tie the ham in to appropriate shape.
8. Cure for 3 – 5 days depending on the weight at 2 – 4 chiller.
9. Wash with fresh water and drip for 30 minutes.
10. Smoke at 130 F until internal temperature reaches 125 F or until the ham is dry and chestnut red is color.
11. Cook in boiling solution containing:

pineapple juice 1 part
water 2 parts
brown sugar ½ part
laurel leaves 2-3 pcs.
Onion 1-2 bulbs
Star anis 1 small pc.
Cook the ham until tender or until internal temperature reaches 155 F.

12. Glaze the ham.
13. Package.

HOW TO MAKE BACON


Ingredients and their Weight

Pork belly 1 kg
Salt 22.0 g
Sugar 11.2 g
Prague powder 6.8 g

Procedure:

1. Mix all ingredients.
2. Rub the mixture in step 1 on the belly slubs evenly.
3. Place the belly slubs on the top of one another.
4. Cure for 12 days per kilo meat. Overhaul the meat every other day.
5. Wash in water and drip for 30 minutes.
6. Smoke at 125 F for 10 to 12 hours.
7. Remove the skin and freeze.
8. Slice and package.

HOW TO MAKE CHICKEN HAM


Ingredients and their Weight

Salt 8.9 g
Sugar 2.3 g
Prague powder 2.1 g
Water 100 ml

Procedure:

1. Wash the chicken by removing the remaining lungs and kidney at the backbone.
2. Measure the amount of water that will submerge the chicken.
3. Based on the amount of water required, prepare the ingredients using the proportion above per 100 ml.
4. Soak the chicken in the pickle solution.
5. Test salinity if 35 C.
6. Wash and drip.
7. Smoke for 8 – 1- hours or until dry and brown red in color.
8. Cook in the boiling solution similar to pork ham. Thicken the solution and use as sauce.
9. Package.
